Ridge gourd chutney/ Beerakaya Chutney

Ridge Guard Chutney Ingredients :

▪ Bottle gourd-1/4kg
▪ Green chillies -50gm
▪ Tamarind-10gm
▪ Jeera
▪ Salt
▪ Haldi
▪  Sesame seeds
▪  Oil
▪  Garlic

(Roast  4 tablespoons of sesame seeds and grind in to fine powder , keep it aside. Chop bottle gourd in to small pieces)

Procedure of Ridge guard Chuney:

◆ Place a pan on a flame, add 3 tablespoons of oil, then jeera, a pinch of haldi.
◆ Now add small pieces of bottle gourd, tamarind, green chillies, and fry till they are cooked well
◆ Put off the flame now , transfer them in to a dry jar, add sesame powder which is prepared before the procedure and 2-3 garlic, add required amounts of salt according to your taste and grind it to paste.
◆ Now place a pan and add 2 tablespoons of oil, 2 dried red chillies, jeera, mustard, curry leaves, black gram, and fry them.
◆ Transfer the above one to the grinded paste.
◆ Your chutney is ready to serve, tastes good with rice.
◆ This can be preserved fresh for 1 week.
