Coconut brinjal fry
◆ Coconut pieces(dry) -1/2 cup
◆ Mirchi powder
◆ Salt
◆ Turmeric powder
◆ Garlic -3 pieces
◆ Curry leaves
◆ Mustard
◆ Jeera
◆ Oil
◆ coriander leaves
( Grind coconut pieces ,enough ,mirchi powder, garlic pieces in to fine powder }
(Cut brinjal in to long straight pieces and keep in a bowl of water with a pinch of salt )
Procedure
◆ Place a pan on flame and add 3tablespoons of oil, add half teaspoon of jeera, half teaspoon of mustard, curry leaves and cook for 1 minute.
◆ Now add the above brinjal pieces and add half teaspoon of turmeric powder, a pinch of salt as enough salt is being added in the above grinded powder, mix well ,close with a lid and cook for 3 minutes.
◆ Now add the above prepared coconut powder and mix well, cook for 1 minute, add finely chopped coriander leaves and serve with any roti varieties and rice.
