Green brinjal fry

Ingredients

◆ Brinjal (long)-1/4kg
◆ Green chillies - 10
◆ Ginger -a small piece
◆ Garlic -3 pieces
◆ Salt
◆ Turmeric powder
◆ Oil
◆ Curry leaves
◆ Mustard
◆ Jeera
◆ coriander leaves

(Cut the brinjal in to straight long pieces and in a bowl of water with a pinch of salt in it)
(Grind the above green chillies, ginger and garlic with a pinch of salt and keep aside )

Procedure

◆ Place a pan on flame and add 3tablespoons of oil,half teaspoon of jeera and half teaspoon of mustard,curry leaves and let it cook for 1 minute
◆ Now add the above brinjal pieces and add enough salt, half teaspoon of turmeric powder and mix well.
◆ Close the pan with a lid and cook for 3 minutes on low flame.
◆ Now add the prepared green paste and mix thoroughly, cook for 1 minute, add finely chopped coriander and serve.
◆ Good combination with all roti varieties and rice.
