Coconut rice
◆ Cooked rice -1bowl
◆ Grated coconut - 1 cup (not the dried coconut )
◆ Black pepper powder -1 teaspoon
◆ Jeera - half teaspoon
◆ Mustard - half teaspoon
◆ Black gram - 1 tablespoon
◆ Bengal gram - 1 tablespoon
◆ Ground nut - 2 tablespoons
◆ Green chillies - 4-5 (split in to two pieces )
◆ Oil -2 to 3 tablespoons
◆ Curry leaves
◆ Red chillies - 4
◆ Salt
◆ Place a pan on flame and add 2 tablespoons of oil and red chillies and then add half teaspoon of jeera and mustard seeds.
◆ Then add 1 tablespoon of black gram, 1 tablespoon of bengal gram and 2 tablespoons of ground nut and cook for 2 minutes on low flame.
◆ Now add green chillies, curry leaves enough salt sufficient for the rice also.
◆ Then add the above grated coconut and cook for 2 minutes, now add 1 teaspoon of black pepper powder and mix well.
◆ Now add the above cooked rice and mix thoroughly.
◆ Now coconut rice is ready to serve hot.
NOTE
● Cashews fried in ghee can also be added to coconut rice if interested.
