Egga Masala Curry Ingredients


◆ Boiled eggs-6
◆ Finely chopped onions -1cup
◆Finely chopped tomatoes -1 cup
◆ Sesame seeds (nuvvulu)-4 tablespoons
◆ Fenugreek seeds -1 teaspoon
◆ Mustard -1 teaspoon
◆ Jeera -1 teaspoon
◆Coriander powder - 1 tablespoon
◆ Salt
◆ Turmeric powder
◆ Mirchi powder
◆ Curry leaves
◆ coriander leaves
◆Oil
◆ Ginger garlic paste

Procedure of Egg Masala Curry


◆ Place a pan on flame and add finely chopped onions ,fry them till the colour changes to golden yellow colour, keep aside ,add tomatoes in the same pan till the water escapes out,keep aside (do not add oil)
◆ Now fry 2 tablespoons of sesame seeds, 1 teaspoon of fenugreek seeds, 1 teaspoon of jeera and keep aside. Let it cool down, then transfer the above roasted tomatoes, onions, sesame seeds, jeera,fenugreek seeds in to a jar and grind in to fine paste.
◆ Now place a pan on flame and add 4 tablespoons of oil, 1 teaspoon of mustard, curry leaves, ginger garlic paste, 1 cup of chopped onions,let it fry for 5 minutes, now add the above prepared paste and mix well ,add small glass full of water enough salt and cook for 10 minutes.
◆ When the oil starts spilling,add 1 tablespoon of coriander powder, boiled eggs ,mix well put off the flame and transfer in to a serving bowl and garnish with coriander leaves.
 Good combination with rice and roti.
