Brinjal pakodi, Vankaya Pakodi
◆ Brinjal -250gm (long )
◆ Bengal gram flour ( senagapindi ) - 1 cup
◆ Rice flour - 2 tablespoons
◆ Water
◆ Oil
◆ Salt
◆ Baking soda - 1 pinch
◆ Firstly cut the brinjal in to long fine pieces and keep aside.
◆ Now take a bowl and add the above brinjal pieces and then bengal gram powder and 2 tablespoons of rice flour, pinch of baking soda, enough salt and mix well.
◆ Now add water in small intervals and make a thick paste. (If more water is added pakodi will be very soft not crunchy )
◆ Now place a pan on flame and add oil for deep fry, now drop the above prepared paste in the oil in small quantities and fry them till the colour changes to golden brown colour.
◆ Now place the above fried brinjal pakodi in a tissue paper and then serve hot with tomato sauce .
Vankaya Pakodi Ingredients
